No, it doesn't matter what colour the egg shell is, brown, white, blue or green, the colour of the egg has no effect on the contents. What the chicken eats and the way in which the chicken is kept does have an effect on how healthy the contents of the eggs are which is how some egg producers in the UK can claim they have more Omega-3 fatty acids in their eggs than others for example. Free range hens will always have the opportunity to pick up many extras in their diet so can produce eggs that are more healthy than caged hens.
